Paglietta Shop Firm and dense with richPaglietta belongs to the Paglierina type cheese that is a speciality of the provinces of Turin and Cuneo in Italy.  Known by a variety of names, almost all based on paglia, the Italian term for straw.  Formerly aged on straw mats (no longer used), which left characteristic stripes on their soft rind.
